Daughter of dairy farmers in Les Hermites, she began her training as a cheese refiner on farms in the Alps with the desire to be able to make raw milk raclette cheese, matured in tuffeau cellars, in Touraine.
She settled in January 2020 and created her cheese processing laboratory in the farm and then fitted out the natural cellars further down, in the village of Les Hermites.
